Sakuramochi 桜餅
A pink rice-cake sweet filled with red bean paste and wrapped in a salted cherry leaf. One of the best-known spring wagashi.
About Sakuramochi
- What it is: A wagashi (traditional Japanese sweet) of pink glutinous rice around sweet red bean paste, wrapped in a cherry leaf pickled in salt, which adds a light cherry blossom scent and a salty note.
- Styles: Kanto style, linked to Chomeiji Temple in Mukojima, Tokyo, is a thin crepe-like pancake folded around the bean paste. Kansai style, or domyoji, named after Domyoji Temple in Osaka, uses coarsely ground glutinous rice for a chewy, grainy texture.
- Season: Spring, around cherry blossom time and Hinamatsuri (the Doll Festival) on 3 March.
- Wagashi: Japanese sweets change with the seasons in shape, colour and ingredients. Kyoto, Kanazawa and Matsue are known as the great wagashi towns.
