About Purin

  • What it is: A chilled egg-and-milk custard, silky and smooth, firm enough to hold its shape but still jiggly, topped with caramel.
  • History: Pudding probably reached Japan around 1860 through a European-style hotel in Yokohama, and custard pudding was the Western dessert that stayed popular.
  • Styles: Baked (yaki purin), steamed (mushi purin) and gelatin-set versions; most packaged supermarket purin is set with gelatin. Flavours include matcha, pumpkin, black sesame, chocolate and sweet potato.
  • Where to try it: Convenience stores, supermarkets, Western-style bakeries and pastry shops all over Japan. Many people also make it at home.
  • How to eat it: Eaten cold as an afternoon snack or after a meal, either turned out onto a plate or straight from its cup.
