Okonomiyaki お好み焼き
A savoury pancake of batter, cabbage, egg and meat or seafood, cooked on a flat griddle. The name means roughly "grilled as you like it".
About Okonomiyaki
- What it is: Flour batter and shredded cabbage with pork, squid, shrimp or other fillings, grilled on a hot teppan and finished with a sweet-savoury brown sauce, mayonnaise, aonori seaweed and bonito flakes.
- Styles: Osaka (Kansai) style mixes everything into a batter with grated yam, then grills it like a thick pancake. Hiroshima style is layered rather than mixed, with noodles (soba or udon), a fried egg and a large pile of cabbage.
- Where to try it: Osaka, where many places let you cook your own at a griddle table, and Hiroshima, where small counter restaurants cook it for you. It is also a classic at festival food stalls (yatai), where it is one of the most filling things on offer.
- How to eat it: Sit at the counter to watch it being made, and use the small metal spatula provided to cut and eat it straight from the griddle. It is often shared.
