Karaage 唐揚げ
Karaage is Japanese fried chicken: bite-sized pieces marinated, coated in starch and deep-fried.
About Karaage
- What it is: Chicken marinated in soy sauce, sake and ginger, dusted with starch rather than battered, then fried. It is often served with rice and shredded cabbage.
- Nakatsu style: Nakatsu in Oita is called the "holy land" of karaage, and neighbouring Usa is known as the birthplace of specialist karaage shops. The post-war boom began here, helped by the many local chicken farms. Nakatsu holds a yearly karaage festival with over 60 shops.
- Styles: Hokkaido's zangi comes with a spicy dipping sauce. Shops selling Nakatsu karaage can be found all over Japan.
- Where to try it: Specialist takeaway shops, food stands and convenience stores, where it is a standard hot snack.
