About Ochazuke

  • What it is: A bowl of rice with tea or dashi poured over. Toppings include salted salmon, umeboshi, nori, cod roe, sesame seeds and wasabi.
  • Tea or dashi: Green tea is usual at home and gives a mild flavour. Restaurants often use dashi, which tastes richer.
  • Where to try it: At home, and in Japanese restaurants as the end of a meal. Packets of instant ochazuke seasoning are sold everywhere. In Kyoto it is called bubuzuke.
  • How to eat it: It is a quick meal, a light finish to a bigger one, or something easy when feeling unwell. Leftover rice works well.
